June 2022” This seasons menu, like all menus, tells us what the Victorian farms are going through. Brassicas, hearty leaves in our salad, Jerusalem artichokes and foraged pine mushroom mushrooms are showing good strength. The bounty of the ocean is always at its peak as the water temperature drops. Oysters heading into their prime & fatty fish are looking beautiful. Creativity is about connecting those things.A few new items of note would be the pine mushroom tart and the rich Murray cod & brassicas with anchovy bordelaise. The beef tartare, Oscietra caviar jacket potato is very decedent & delicious.
