Lume’s Executive Chef’s Elijah Holland and Jason Staudt, Executive Chef of Stokehouse St Kilda, have teamed up to combine their love of native produce and knowledge of coastal ecosystems to produce a stunning, multi-course tasting menu that will hero ingredients from Victoria’s beautiful coastline.

Elijah and Jason, who used to work together at Aria Sydney, will be foraging ingredients from Port Phillip, Mornington Peninsula, Main Ridge and Wilson’s Promontory to create the one-off menu for the night.
Think wild abalone skewer, coastal daisy bush, brown butter grilled over fire
Oyster, scarlett prawn kissed with charcoal
Smoked local scallop, wild seaweed salad, kelp vinegar
Hand-dived whole black rock sea urchin & more.
