Recently featured in Gourmet Traveller, Executive Chef Jason Staudt’s first Stokehouse menu showcases his love for seafood and dedication towards sustainable produce. Sample dishes including the Australian seafood platter – Mooloolaba spanner crab, scarlet prawns, oysters, diamond clams and scallop ceviche; flaked snapper cheeks, pumpernickel and nasturtium; heirloom tomato crudo, Meredith feta, stone fruits, almonds and their oil, and; charred Fremantle octopus with n’duja salsa, olives and desert lime.
